In Wellington, New Zealand we took the equivalent of a roller coaster ride in a 4 x 4 Jeep across wet sand to watch seals basking in the sun.
After our stomachs settled we had a delicious lunch in Floridita's cafe. Their salads were one of the memorable meals of the trip because of the fresh and unique combination of ingredients. (See the end of this post for a sample recipe.)
The shops were quaint....
...and the harbor was beautiful.
FLORIDITA'S SERRANO HAM, FRESH FIGS AND PURPLE BASIL SALAD
Figs are amongst the most delicious sweet fruits you can taste. They have a short shelf life & should be eaten at their peak to experience their sweet flavour. The quality of ingredients in this dish is vital to its success.
2 perfectly ripe figs
3 slices of Serrano ham
A small handful of purple basil leaves
Extra virgin olive oil
Salt and pepper
• Tear figs in half
• Place figs, Serrano ham and basil leaves, in a mixing bowl.
• Season and dress lightly with a little olive oil and balsamic. Toss gently to coat everything.
• Plate on a flat white plate, interweaving the torn figs and ham, finally drizzle with a little more olive oil.
